Method
- Add the peeled banana, eggs, and 1/4 cup (60 ml) milk to a blender. Blend until the banana is broken down and the mixture looks mostly smooth.
- Add the rolled oats, whey protein powder, baking powder, cinnamon, and salt to the blender.
- Blend just until the oats are finely broken down and the batter is evenly combined with no dry pockets remaining. Avoid blending longer than necessary.
- Let the batter rest for 5 minutes so the oats and protein powder can absorb some of the liquid.
- The batter should be thick but pourable. If it sits in a firm mound or does not spread slightly, blend in 1 tablespoon of additional milk. Add the second tablespoon only if needed.
- Heat a nonstick or well-seasoned skillet over medium-low heat. Add a thin coating of neutral cooking oil. Reduce the heat if the oil smokes or the batter begins browning immediately.
- Pour approximately 3 tablespoons of batter into the skillet for each pancake. Keep the pancakes small so they cook evenly and are easier to flip.
- Cook until the edges look set, the surface is no longer completely wet, and a spatula can slide underneath without tearing the pancake.
- Flip each pancake once and cook the second side until browned and the center is fully cooked. During recipe testing, confirm that the center reaches 160°F (71°C).
- Continue cooking the remaining batter, lightly greasing the skillet again only when needed. The provisional yield is approximately 8 small pancakes.
Notes
Batter consistency: Whey protein powders vary in how much liquid they absorb. Rest the batter before adjusting it, then add milk only 1 tablespoon at a time.
Protein powder substitutions: Plant-based protein, casein blends, and collagen powder are not verified one-for-one substitutes for whey protein in this formula.
Cooking temperature: Use medium-low heat. High heat can brown the outside before the egg-containing center is fully cooked.
Allergen information: This recipe contains eggs and may contain milk or soy depending on the milk and protein powder used. Check all product labels when cooking for someone with an allergy.
Storage: Cool cooked pancakes promptly, transfer them to a shallow airtight container, and refrigerate within 2 hours. Use refrigerated leftovers within 3 to 4 days.
Reheating: Reheat leftovers until the center reaches 165°F (74°C).
Optional toppings: Serve with sliced banana, berries, plain Greek yogurt, peanut butter, seed butter, maple syrup, or cinnamon. Toppings are not included in the base nutrition.
