Ingredients
  

Chicken
  • 1 1/2 pounds boneless, skinless chicken breast or chicken thighs Cut into bite-size pieces if needed.
  • 1 tablespoon olive oil or neutral cooking oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3/4 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper
Rice
  • 4 cups cooked white or brown rice Microwave rice or safely stored leftover rice may also be used.
Buffalo Sauce
  • 1/2 cup buffalo-style hot sauce Use more or less according to your preferred heat level.
  • 1 tablespoon butter or olive oil Optional, for a richer buffalo sauce.
Crunchy Toppings
  • 2 stalks celery Thinly sliced.
  • 1 cup carrots Shredded or thinly sliced.
  • 2 cups romaine lettuce or shredded cabbage Chopped if using romaine.
  • 1 cup cucumber Thinly sliced; optional.
  • 1/4 cup green onions Thinly sliced.
  • 1 cup cherry tomatoes Halved; optional.
Creamy Yogurt Drizzle
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon salt Adjust to taste.
  • 1 tablespoon water Optional, to thin the sauce as needed.
Optional Add-Ins
  • 1 cup black beans Rinsed and thoroughly drained.
  • 1 cup corn Thawed if frozen and patted dry.
  • 1/2 cup shredded cheddar or Mexican-blend cheese Optional.
  • 1 medium avocado Sliced and added fresh just before serving.

Method
 

  1. Pat the fresh chicken dry and season it evenly with the garlic powder, onion powder, salt, and black pepper.
  2. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned and the thickest pieces reach an internal temperature of 165°F (74°C).
  3. Let freshly cooked chicken rest briefly, then slice or shred it if needed. If using properly stored cooked chicken, warm it thoroughly before continuing.
  4. Place the hot chicken in a mixing bowl and add the buffalo-style hot sauce. Toss until the chicken is evenly coated. For a richer sauce, stir the optional butter or olive oil into the buffalo sauce before tossing it with the chicken.
  5. Prepare the rice according to the package directions, or reheat safely stored leftover rice with a small splash of water until steaming and fluffy.
  6. Make the creamy drizzle by stirring together the Greek yogurt, lemon juice, garlic powder, dried dill, and salt. Add the water gradually if needed until the sauce reaches an easy drizzling consistency.
  7. Prepare the fresh toppings by slicing the celery, cucumber, and green onions, shredding the carrots, and chopping the romaine or cabbage. Keep the fresh vegetables cold until assembly.
  8. Divide the cooked rice evenly among four bowls. Add the buffalo chicken, then arrange the celery, carrots, romaine or cabbage, cucumber, green onions, and any desired optional toppings around the bowl.
  9. Drizzle the bowls with the creamy Greek yogurt sauce immediately before serving.

Notes

For meal prep, store the rice and buffalo chicken together in shallow airtight containers. Keep the creamy drizzle, lettuce, cucumber, avocado, and other cold toppings in separate containers until serving.
Shredded cabbage is a sturdy alternative to romaine when preparing the bowls several days ahead.
Start with less buffalo sauce if you are sensitive to spicy food. Additional sauce can always be added at serving time.
To make the bowl milder, use less buffalo sauce and serve with additional creamy yogurt drizzle.
Cook fresh chicken to an internal temperature of 165°F (74°C). Refrigerate cooked leftovers promptly at 40°F (4°C) or below and use them within 3 to 4 days.
Reheat only the rice, chicken, and other cooked components to 165°F (74°C). Add a small splash of water to dry rice before reheating, then add the cold vegetables and creamy sauce afterward.
Drain black beans and corn thoroughly before adding them to meal prep containers to prevent excess moisture.
