- Pat the fresh chicken dry and season it evenly with the garlic powder, onion powder, salt, and black pepper.
- Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned and the thickest pieces reach an internal temperature of 165°F (74°C).
- Let freshly cooked chicken rest briefly, then slice or shred it if needed. If using properly stored cooked chicken, warm it thoroughly before continuing.
- Place the hot chicken in a mixing bowl and add the buffalo-style hot sauce. Toss until the chicken is evenly coated. For a richer sauce, stir the optional butter or olive oil into the buffalo sauce before tossing it with the chicken.
- Prepare the rice according to the package directions, or reheat safely stored leftover rice with a small splash of water until steaming and fluffy.
- Make the creamy drizzle by stirring together the Greek yogurt, lemon juice, garlic powder, dried dill, and salt. Add the water gradually if needed until the sauce reaches an easy drizzling consistency.
- Prepare the fresh toppings by slicing the celery, cucumber, and green onions, shredding the carrots, and chopping the romaine or cabbage. Keep the fresh vegetables cold until assembly.
- Divide the cooked rice evenly among four bowls. Add the buffalo chicken, then arrange the celery, carrots, romaine or cabbage, cucumber, green onions, and any desired optional toppings around the bowl.
- Drizzle the bowls with the creamy Greek yogurt sauce immediately before serving.
Notes
For meal prep, store the rice and buffalo chicken together in shallow airtight containers. Keep the creamy drizzle, lettuce, cucumber, avocado, and other cold toppings in separate containers until serving.
Shredded cabbage is a sturdy alternative to romaine when preparing the bowls several days ahead.
Start with less buffalo sauce if you are sensitive to spicy food. Additional sauce can always be added at serving time.
To make the bowl milder, use less buffalo sauce and serve with additional creamy yogurt drizzle.
Cook fresh chicken to an internal temperature of 165°F (74°C). Refrigerate cooked leftovers promptly at 40°F (4°C) or below and use them within 3 to 4 days.
