- Preheat the oven to 425°F (220°C). Line a rimmed sheet pan with parchment paper if desired.
- Cook the brown rice according to the package directions. When it is tender, remove it from the heat and allow excess steam to escape before assembling the bowls.
- Place the cubed sweet potato and broccoli florets on the sheet pan. Toss with the olive oil, salt, and black pepper, then spread the vegetables into a single layer.
- Roast the vegetables for 20 to 25 minutes, stirring once halfway through, until the sweet potato is tender and the broccoli is lightly browned. Let excess moisture evaporate before packing.
- While the vegetables roast, place the chicken in a bowl and season it with the chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
- Heat the cooking oil in a large skillet over medium-high heat. Add the seasoned chicken in an even layer and cook for 7 to 10 minutes, stirring occasionally, until browned and cooked through.
- Check the thickest pieces with an instant-read thermometer. The chicken must reach an internal temperature of 165°F (74°C). Remove it from the heat and allow it to cool briefly.
- To make the sauce, whisk together the Greek yogurt, lime juice, cumin, garlic powder, and salt. Add water one tablespoon at a time until the sauce reaches a pourable consistency.
- Divide the cooked brown rice, chicken, black beans, corn, roasted sweet potato, broccoli, and shredded cabbage evenly among four shallow meal prep containers.
- Divide the lime yogurt sauce among four small leak-resistant cups. Store the sauce, salsa, avocado, cilantro, and other fresh toppings separately from the reheating containers.
- Refrigerate the bowls after the cooked ingredients have stopped steaming. To serve, reheat the chicken, rice, beans, corn, and roasted vegetables to 165°F (74°C), then add the cabbage, sauce, and optional fresh toppings.
Notes
Meal prep texture: Let the rice, chicken, and roasted vegetables stop steaming before sealing the containers. Trapped steam can make the ingredients watery and soften the vegetables.
Keep components separate: Store the lime yogurt sauce, salsa, avocado, cucumber, tomatoes, fresh herbs, and crunchy toppings separately. Add them after reheating or immediately before eating.
Budget substitutions: Chicken thighs or ground chicken can replace chicken breast. Brown rice can be replaced with white rice plus additional beans and vegetables. Frozen broccoli and corn are practical alternatives to fresh vegetables.
