Ingredients
  

Pasta Salad
  • 12 ounces dry rotini Small shells or cavatappi may also be used
  • 18 ounces cooked boneless skinless chicken breast Fully cooled and diced or shredded
  • 1 1/2 cups dill pickles Chopped and well drained
  • 1/2 cup celery Finely diced
  • 1/4 cup red onion Finely diced
  • 1/4 cup fresh dill Chopped
  • 1/4 cup dill pickle brine Divided
Greek Yogurt Dressing
  • 1 cup thick plain nonfat Greek yogurt Use unsweetened yogurt
  • 1/3 cup regular mayonnaise
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • salt Add only if needed after the salad has chilled

Method
 

  1. Cook the rotini according to the package directions until al dente.
  2. Drain the pasta, rinse it briefly under cool running water, and leave it in the colander until the excess water has drained completely.
  3. Transfer the drained pasta to a large mixing bowl. Toss it with 2 tablespoons of the pickle brine and let it stand for 5 minutes. Drain any liquid remaining at the bottom of the bowl.
  4. In a separate bowl, whisk together the Greek yogurt, mayonnaise, remaining 2 tablespoons pickle brine, yellow mustard, garlic powder, onion powder, and black pepper until smooth.
  5. Transfer approximately 1/4 cup of the dressing to a small covered container. Refrigerate this portion for refreshing later servings.
  6. Add the fully cooled chicken, drained dill pickles, celery, red onion, and fresh dill to the pasta.
  7. Pour the main portion of the dressing over the salad. Fold gently until the pasta, chicken, and vegetables are evenly coated.
  8. Cover and refrigerate the salad for at least 30 minutes.
  9. Taste the chilled salad and add salt only if needed. Divide it evenly among 6 meal-prep containers and keep refrigerated until serving.
  10. Before eating a later portion, stir in a small spoonful of the reserved dressing if the pasta has absorbed too much sauce.

Notes

Kitchen testing: The preparation time, cooking time, final yield, dressing quantity, seasoning, and refrigerated texture should be confirmed during kitchen testing before publication.
Chicken safety: Cool cooked chicken completely before combining it with the yogurt dressing. When cooking chicken from raw, use a food thermometer and confirm that the thickest part reaches 165°F or 74°C.
Prevent watery dressing: Drain the pasta and pickles thoroughly, and make sure the chicken is fully cooled before assembling the salad.
Keep it creamy: Pasta absorbs dressing during refrigeration. Reserve approximately 1/4 cup of dressing and add it gradually to later servings as needed.
Salt: Pickles, pickle brine, mustard, mayonnaise, and prepared chicken can contain significant sodium. Taste the fully chilled salad before adding salt.
Storage: Store the salad and reserved dressing in covered containers at 40°F or below. Use within 3 to 4 days and refrigerate perishable ingredients within 2 hours, or within 1 hour when the surrounding temperature is above 90°F.
Transport: Carry the salad in an insulated lunch bag or cooler with an ice pack when refrigeration is not immediately available.
Variations: Plain leftover cooked chicken may replace freshly cooked chicken. Green onions may replace red onion, and a small amount of dried dill may replace fresh dill. Protein-enriched pasta or blended cottage cheese will change the texture and nutrition.
Freezing: Freezing is not recommended because the creamy dressing may separate and the pasta, celery, and pickles may lose their intended texture after thawing.
