Ingredients
  

Rice and Bowl Base
  • 1 1/3 cups uncooked long-grain white rice or use about 4 cups cooked rice
  • 1 lb 93% lean ground turkey
  • 1 medium onion diced
  • 1 cup bell peppers sliced, fresh or frozen
  • 1 cup frozen corn
  • 1 can black beans 15 oz can, rinsed and drained
  • 1/4 cup salsa or low-sodium broth to keep the turkey mixture moist
Seasoning
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder divided
  • 1/2 tsp onion powder
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper or to taste
Greek Yogurt Lime Sauce
  • 1/2 cup plain nonfat Greek yogurt
  • 1 medium lime juiced
  • 1/2 tsp garlic powder use the remaining garlic powder for the sauce
  • 1 pinch salt
  • 2 tsp water optional, to thin the sauce
Optional Toppings
  • 1 cup shredded lettuce or shredded cabbage optional
  • 1/2 cup diced tomatoes optional
  • 2 tbsp cilantro chopped, optional
  • 2 tbsp green onions sliced, optional
  • 4 wedges lime optional, for serving
  • 1 tbsp hot sauce optional, add to taste

Method
 

  1. Cook the rice according to package directions. If using cooked rice, warm it with a small splash of water until hot and fluffy, then keep it covered while you prepare the turkey mixture.
  2. Heat a large skillet over medium-high heat. Add the ground turkey and break it apart into small pieces with a spatula.
  3. Cook the turkey until no pink remains, then check the internal temperature with a food thermometer. Ground turkey should reach 165°F.
  4. Stir in the chili powder, cumin, 1/2 teaspoon garlic powder, onion powder, salt, and black pepper until the turkey is evenly seasoned.
  5. Add the salsa or low-sodium broth and stir well so the seasoning coats the turkey and the mixture stays moist.
  6. Add the diced onion, sliced bell peppers, and frozen corn to the skillet. Cook for 3 to 5 minutes, stirring often, until the vegetables soften.
  7. Stir in the rinsed and drained black beans. Cook for 1 to 2 minutes, or until the beans are warmed through.
  8. In a small bowl, mix the Greek yogurt, lime juice, remaining 1/2 teaspoon garlic powder, and a pinch of salt. Add 1 to 2 teaspoons of water if you want a thinner sauce.
  9. Divide the cooked rice between four bowls or meal prep containers. Top each portion with the turkey, vegetable, and bean mixture.
  10. Add the Greek yogurt lime sauce and fresh toppings right before serving. For meal prep, store the sauce and raw toppings separately for the best texture.

Notes

Use a food thermometer to confirm that the ground turkey reaches 165°F. Do not rely on color alone.
If the turkey mixture tastes dry, stir in another small splash of salsa or low-sodium broth after seasoning.
For meal prep, cool the rice and turkey mixture before sealing containers. Store the sauce and fresh toppings separately, then add them after reheating.
Cooked rice, turkey, vegetables, and beans can be stored in shallow airtight containers in the refrigerator for 3 to 4 days. Reheat until steaming hot before serving.
For variations, use brown rice, quinoa, farro, or cauliflower rice instead of white rice. You can also change the flavor with Mediterranean-style toppings, teriyaki-style seasoning, or extra vegetables.
