  • 3/4 cup creamy peanut butter Stir natural peanut butter thoroughly before measuring.
  • 1/3 cup honey Pure maple syrup may be substituted, although the texture and nutrition will change.
  • 1/3 cup mini semisweet chocolate chips Mini chips distribute evenly and help prevent the balls from splitting.

  • 1 pinch salt Recommended when using unsalted peanut butter.

Method
 

  1. Add the creamy peanut butter and honey to a medium mixing bowl. Stir until smooth and evenly combined.
  2. Add the rolled oats and stir until all the oats are thoroughly coated with the peanut butter mixture.
  3. Fold in the mini semisweet chocolate chips and the optional pinch of salt.
  4. Press a spoonful of the mixture between your fingers to test the consistency. It should hold together without releasing excess oil.
  5. Cover the bowl and refrigerate the mixture for about 20 minutes so it becomes easier to portion and roll.
  6. Weigh the complete mixture and divide its total weight by 20. Portion the mixture into 20 pieces, approximately 24 grams each.
  7. Roll each portion gently between your palms until it forms a compact, round ball.
  8. Transfer the balls to a covered container and refrigerate until firm. Serve two balls per serving.

Notes

Texture adjustments: If the mixture crumbles when pressed, add peanut butter or honey 1 teaspoon at a time. If it feels sticky, chill it for 20 minutes before making adjustments. If it remains sticky after chilling, add rolled oats 1 tablespoon at a time.
Substitutions: Pure maple syrup can replace the honey. Smooth sunflower seed butter can replace the peanut butter, although the flavor, consistency, and allergen profile will change. Finely chopped chocolate or raisins can replace the mini chocolate chips.
Storage: Store the balls in an airtight container in a refrigerator kept at 40°F (4°C) or below and use within 7 days for the best quality. Freeze in a single layer until firm, then transfer to a freezer-safe container and use within approximately 2 months.
