Turkey Pizza Pinwheel Lunch Boxes

Cold, packable turkey pizza pinwheels filled with mozzarella, spinach, and a creamy tomato-herb spread, then served with extra pizza sauce for dipping. They are easy to prepare ahead and require no reheating.

Ingredients
  

Turkey Pizza Pinwheels
  • 4 large soft flour tortillas 10-inch tortillas
  • 4 oz reduced-fat cream cheese spread softened
  • 2 tbsp thick pizza sauce for the cream cheese spread
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 12 oz thinly sliced fully cooked deli turkey
  • 1 cup low-moisture part-skim shredded mozzarella about 4 ounces
  • 1 cup baby spinach completely dry and lightly chopped
Dipping Sauce
  • 1/2 cup pizza sauce divide into four dipping cups, 2 tablespoons per serving

Method
 

  1. Add the softened cream cheese, 2 tablespoons of pizza sauce, Italian seasoning, and garlic powder to a small bowl. Mix until smooth and evenly combined.
  2. Lay the four tortillas flat on a clean work surface.
  3. Divide the cream cheese mixture evenly among the tortillas and spread it in a thin layer all the way to the edges.
  4. Arrange 3 ounces (85 g) of turkey over about two thirds of each tortilla, keeping the slices flat rather than piling them in the center.
  5. Sprinkle 1/4 cup (about 28 g) of mozzarella over the turkey on each tortilla.
  6. Divide the completely dry spinach among the four tortillas in a light, even layer. Leave a strip of the cream cheese mixture visible along the closing edge.
  7. Starting from the filled side, roll each tortilla firmly toward the exposed cream cheese edge.
  8. Wrap the tortilla rolls and refrigerate for 30 minutes so the filling firms and the pinwheels hold their shape more easily.
  9. Place each chilled roll seam-side down. Trim only the mostly empty ends, then use a sharp knife to cut each roll into 6 to 8 pieces.
  10. Pack one sliced tortilla roll in each lunch box and add 2 tablespoons (30 ml) of pizza sauce in a separate sealed dipping cup.
  11. Add optional fruit, vegetables, or crackers according to appetite, then keep the completed lunch boxes refrigerated until serving.

Notes

Each tortilla roll yields approximately 6 to 8 pinwheels, depending on tortilla size, filling thickness, and slice width.
For the best texture, prepare the rolls the night before or up to two days ahead. For fresher cut edges, refrigerate the rolls whole and slice them shortly before packing.
Use a thick pizza sauce and completely dry the spinach to reduce excess moisture. Keep the additional pizza sauce in a separate sealed cup instead of adding it inside the tortilla.
Store the pinwheels at 40°F (4°C) or below. When refrigeration is unavailable during transport, use an insulated lunch bag with two cold sources. Do not restart the storage period when the rolls are assembled; the age and storage limits of previously opened deli turkey and other ingredients still apply.
Freezing is not recommended because the tortilla, spinach, and cream cheese spread may lose their original texture after thawing.
